Ingredients

 
Quantity Measure Ingredients Description:
500 Grams Mutton Wash and cut
0 Little Salt Add to meat
2 Medium Chillies Green Green Minced Masala,
1 Inch Ginger (Adhrak) Green Minced Masala,
0 Few Coriander Leaves (Kothmeer) Green Minced Masala,
2 Nos. Chillies Red Dry Red ground masala
2 Teaspoon Garam-Masala Red ground masala
Half Teaspoon Turmeric Powder Red ground masala
6 Nos. Cloves (Lavang) Red ground masala
1 Teaspoon Coriander/Dhania Powder Powder Masala
Half Teaspoon Jeera Powder Powder Masala
2 Teaspoon Cinnamon Powder Powder Masala
Half Teaspoon Pepper Powder Powder Masala
4 Teacup Hot Water Folr cooking rice
  As Required Ghee For frying ingredients
6 Medium Onions Sliced onion
6 Medium Potatoes Pare and cut in thin slices.
500 Grams Rice, fine grain. Cook rice.

Method

Cut the meat into pieces and boil in two cups of water and salt to taste.

Prepare green minced masala.    
Grind the red masala.  
Prepare the powder masala, and pound cloves with it..

Preoare the  onions in thin slices.   Keep aside
Pare  and cut the potatoes in thin slices.   Keep aside..

In a  vessel  heat 2 spoons of ghee, and fry the sliced onions, till they are crisp and brown.  Remove and keep aside in one plate dividing them in four parts.  Then put the potato slices and fry them crisp.  Remove and keep in another plate also dividing them in four parts.

In  4  spoons of ghee, heat it and fry the rice in a deep and broad vessel.  Stir, and when brown, add hot water, to be 2 fingers above the rice.  When almost cooked, transfer it to the microwave oven, to make it a dry dish and divide in four parts.

In another frying pan  heat the remaining ghee, and fry the green ground masala and salt to taste.  Brown it well.   Then add the Red masala, and fry and brown it as well.    Then put the boiled meat, the powder masala and more salt if needed.     Cook the meat pieces for about ten minutes till the meat has absorbed the masala and  is dry.   Divide in four parts.   

To serve, put one fourth of the cooked rice in a deep dish and spread it and put a layer .  On top of  the rice layer, put the  a fourth of the fried potatoes spread out.  Then on top of it, make a layer of a fourth of the  fried onion slices.   Then again a layer of meat, then rice, then potatoes and onions, and continue making layers, till all the ingredients are used.   Top up the top layer with a spinkling of hot ghee.

Serve with a suitable salad.
