Ingredients

Quantity Measure Ingredients Description:
50 Grams Margarine white butter - cold
200 Grams Flour, Maida - (Refined)  
1 Nos. Egg Yolks  
1 Teacup Coconut scraped (fresh) for filling
1/2 Teacup Sugar, Table for filling
1/2 Teaspoon Rose Essence to mix - use as required
1/4 Teacup Water to mix sugar and coconut
Three Nos. Food Colour pink,lemon, light blue.

Method

Rub the butter into the flour with finger tips till it resembles bread crombs.   Knead lightly, add egg yolk and cold water and form a dough, roll and cut.  Put in tartlet forms.  Prick and bake for about 1 minute.  Make handles (of the dough) and bake separately.  

For filling

One cup freshly grated coconut.  Half cup sugar. Quarter cup water.      Mix all the ingredients and cook till dry.  Add little rose essence to give flavour.    Divide into three portions and colour them with food colouring - pink, lemon, light blue.

Put the filling in the tartlet forms, fix the handles over them  and bake for about one minute.
