Mushroom Dip

2 Large Chillies Green Minced
4 Large Onions Minced
6-7 Nos. Pepper Corns Crushed
2 Tablespoon Ginger Garlic Paste  
3 Packet Mushrooms Minced
1/4 Teacup Milk  
1/2 Teacup Cream, Heavy Nestle thick cream
2 Tablespoon Cream Cheese optional
1/2 Teaspoon Mixed Herbs (Oregano,basil,thyme)  
  As Required Salt to taste


Heat  some oil in a pan, and fry the minced green chillies, then the minced onions.    Fry till the onions turn pink, add the crushed pepper corns.   Add ginger garlic paste.   Once the mixture has turned golden brown, add the minced mushrooms.    Cook on low flame till the mushroom leave water.   Add the milk, Nestle cream, and simmer    As the mixture starts to boil, add the optional cream cheese and the mixed herbs.    Let this mixture cook till, it reduced in volume by a quarter then add the salt to taste.

This is now ready to serve either with cream crackers, or canopies, or simply dip the good old plain potato chips.
