Banana Pudding

Ingredients

Quantity Measure  Ingredient Description
6 Large Banana ripe - to be mashed
1/2 Kilogram Bread, White to be mashed
1 Nos Coconut for extracting juice
1/2 Teacup Sugar for mixing
2 Tablespoon Almonds for mixing
2 Tablespoon Plums for mixing
1/2 Teaspoon Nutmeg powder for mixing
2 Tablespoon Butter For basting.
3 Nos Eggs for mixing

Method

Scrape the coconut and take out as much juice as you need. Pick the plums and clean them and blanche the almonds and cut them in thin long strips. Make smaller pieces of plumbs. Remove the crust from the bread slices and then mix the bread with the coconut juice and make a mash. Peel the bananas and mash the pulp and mix it with the bread mash. Mix all the other ingredients and bread three eggs and mix them with the mash and blend thoroughly. Keep the batter sufficiently thick.

Pour in a butter dish, and bake it in an oven. Baste the top with butter. To see if the bake has come out o.k., open the oven door and prick a knife or a skewer into the pudding slightly and pull it out. If any batter sticks to it, it needs more time to bake.
