Quantity Measure Ingredients Description:
750 Grams Flour, Maida - (Refined     ) For batter
500 Grams Sugar, Table For batter
3 Grams Food Colour yellow - for batter
1/2 Tablespoon     Milk for batter
1, 1/2 Teacup Curds for batter
500 Grams Ghee Or cooking oil, for frying

Method

Mix the flour with water, and beat well.  Then add sugar and beat again, well.  If required add a little water.  Mix curds and beat.  Make a batter of the consistency to make poleys (crumpets).   Dissolve food color  with half a tablespoon of milk and mix with the batter.  Keep aside for 4-5 hours if the curds are sour, if not more.

In a deep frying pan, heat ghee or cooking oil, one inch deep, and when hot, pour a spoon full of batter, into the oil and flatten and fry until they are crisp on the sides and golden in colour .
