Ingredients

2 Kilogram Tomatoes Puree
20 Small Orange Deseeded.
2 Medium Lime (fresh) (Limbu) extract juice
3 Kilogram Sugar, Table
Add and cook

Method

Wash, cut and puree the tomatoes.   Puree these in a blender/grinder along with
peeled and deseeded oranges.   

Add the juice of two lemons / limes (fresh)  and grate or cut into fine strips the rind of  one lemon.

Add sugar and cook in a broad mouthed vessel like a wok, or kadai.    Start on high flame, and as it tends to overflow, reduce the flame and keep on stirring.    Continue  till the jam reaches a thick consistency.

Drop small amount onto cold saucer and check for setting point - this will be slightly thinner than normal.


COLD WATER TEST: Drop 1/2 tsp. of syrup in a saucer or shallow bowl of cold water  - if it forms a soft ball, the mixture is ready to be bottled.
