Method
Place the brinjals cut in slices, in a bowl with salt for 15 min then squeeze out the water. In another bowl mix the coriander and jeera powder, haldi powder and ginger garlic paste, mix till it turns to powder consistency. Mix the brinjals in this powder till they are well coated
In a big pan heat the oil add mustard seeds till they splutter then add the brinjals frying on both sides
