Method
Churn the curds in a blender and whisk it till butter separates from the Curds. The liquid that remains below is called butter milk, and what floats above is the butter. Separate the butter from the liquid and preserve in a butter dish, and put in in the refrigerator and you can use the butter milk as a beverage. Adding a little salt to the butter helps to preserve it.
You can have the butter milk, with a little salt to taste. You can also add a few bits of green chillies to give it some pungency. It can also be added to curries.
Butter milk has medicinal properties, and helps digestion in invalids.
