Ingredients

Quarter Kilogram Sugar, powdered Beat with butter
0.5 Kilogram Butter Beat with sugar
10 Whole Egg Yolks Mix with butter-sugar mix
10 Nos Egg Whites Beat
100 Grammes Rava/Soji/"Semolina" Sift
Quarter Kilogram Flour, Maida - (Refined) Sift
100 Gallon Raisins Stone and clean
100 Grammes Currants Pick and Clean
100 Grammes Almonds Blanch and mince
Quarter Kilogram Ginger Preserve Cut fine
100 Grammes Dried Orange Peel Cut fine
100 Grammes Candied Lemon peel To be added to cake mix
100 Grammes Candied Orange peel To be added to cake mix
100 Grammes Candied Citron peel To be added to cake mix
1 Teaspoon Caraway Seeds - Shahijeera To be added to cake mix
0.5 Teaspoon Mace Powder/Javitri To be added to cake mix
0.5 Teaspoon Cinnamon Powder To be added to cake mix
0.5 Teaspoon Nutmeg powder To be added to cake mix
0.5 Tablespoon Brandy To be added to cake mix

Method

A Powder the sugar finely in an electric grinder.   Or use powdered sugar
B.Sift the flour and soji,
C.Stone and clean the raisins, currants and cut them.  Blanch almonds and cut them in strips, cut fine preserved ginger, citron, orange peel etc, dry all then mix in dry flour well till all moisture is gone.  

D.In a vessel beat the butter  till it is creamy, then add sugar and 'rub' it well till it dissolves and becomes a white cream.
E.Break the eggs and put only the yolks one by one in the butter. Whisk well till all egg yolks are blended well into a cream.  
F.In another pan, beat the whites of the eggs until they become a fine white cream.   

G.Add little at a time, soji and flour to the prepared butter-sugar cream, mix well, in a batter mixer till it is good mixture.  Then add the raisins and other fruits, whisk the mixer, till all mix well and finally add brandy gradually till the mixture has blended well.  
Lastly add the beaten whites and whisk well and at a higher speed and thoroughly mix all the ingredients.  

H.Pour the cake mixture, in cake tins lined with buttered paper and quickly place in a pre-heated oven.  
I.Bake till brown and well cooked.
