Ingredients

2 Teacup Tamarind Pulp  
1/2 Teacup Sugar  
6 Teacup Water Boiling
1 Tablespoon Cinnamon Powder  

Method:

1. Pour boiling water over the tamarind and bring to the boil for 2 - 3 minutes.

2. Cool and strain.

3. Measure the liquid and to every cup of liquid add 1 cup of sugar.

3. Cook the liquid, cinnamon and sugar at a rolling boil for about 20 minutes, or until sugar dissolves and the jelly reaches setting point.

4. Pour into hot sterilised jars and seal well.
