Mutton Brown Stock

Ingredients

 
Quantity: Measure: Ingredients: Description:
4 Teacup Water For stock preparation
200 Grammes Mutton - Ribs Wash and cut
200 Grammes Mutton Bones Wash
4 Nos Cloves (spice) crush and add
1 Piece Cinnamon cut and add
6 Nos Pepper Corns crush and add
1 Piece Ginger cut and add
2 Medium Carrots cut and add
2 Medium Onions cut and add
3 Large Tomatoes cut and add
1 Sprigs/Twigs Mint Leaves (Pudina) or celery
  As Required Salt to taste.

  Method

Wash and cut meat,  crush the bones, pepper corns, cinnamon, cloves etc.  Scrape/cut the vegetables and onions etc.  Put all in water and boil for about an hour. Remove the floating scum and strain the stock, with the meat.  Add salt to taste.  This is the base of brown soups.
