Method
Cut the broiler chicken in parts of your choice. Wash them, and dry the pieces with a kitchen towel.
Prepare the slices of onions, chillies and ginger. Cut tomatoes in cubes. Chop mint leaves.
Place a deep frying pan on fire with ghee sufficient to fry the masala and the chicken. If there is fat in the chicken it will melt, so you will need less ghee.
When the onions and other masala has browned add the chicken pieces and fry. When you feel they are sufficiently fried, put some hot water in the pan, not to rise above the chicken pieces, and cook, till the chicken pieces are well done.
Serve the dish dry with sauce or gravy.
