Method

Mix the maida flour with quarter liter milk  Add to it sugar and a pinch of salt.  A little nutmeg powder can be added for flavor.

Beat the eggs and mix making it a thick batter, adding the remaining milk till you get a medium consistency of thickness.

In a deep pan, heat the ghee or oil and for 5 minutes dip the Kokisam form in the boiling oil, then carefully, touch the form to the batter, so that only the bottom of the brim, touches it.

Now lift it and dip it in the boiling oil.   The shaped batter will now drop into the oil, and let it fry.   Turn the formed kokissam and fry it on all sides, and then when done, remove it with a perforated ladle.
