Method
Melt ghee - (do not boil). In a steel thali cream sugar and melted ghee till fluffy. Gradually add Maida, essence, knead to make a soft dough. Keep overnight or few hours in a vessel oiled on the sides and covered.
Form into balls and decorate. Bake for 15 minutes till slight crack is notice on any of the Nankatais, remove immediately.
Very important: Do not remove the Nankatais from the thali immediately. Shift them with a knife, and keep to cool for a few hours. (2 to 3 hours)
