Method
Mix the flour with water, and beat well. Then add sugar and beat again, well. If required add a little water. Mix curds and beat. Make a batter of the consistency to make poleys (crumpets). Dissolve food color with half a tablespoon of milk and mix with the batter. Keep aside for 4-5 hours if the curds are sour, if not more.
In a deep frying pan, heat ghee or cooking oil, one inch deep, and when hot, pour a spoon full of batter, into the oil and flatten and fry until they are crisp on the sides and golden in colour .
